This recipe is composed of three parts. It consists of the spiced, Zucchini and Mushrooms , the satay sauce and any carbs of your choice really! I usually serve it with noodles ( because I love NOODLES! ) Personally I think this recipe would be a perfect meal for the whole family. It's simple easy , quick and full of flavour, even your non veggie family would love it too !
Ingredients you will need..
Noodles
2 tsp olive oil
Pinch of salt
Veg
1Zucchini
3 mushrooms
Pinch of salt
Pinch of pepper
SATAY SAUCE
120g peanut butter
juice of 1 large lemon
1 + 1/2 TBSP Tamari or soy sauce
2 + 1/2 TBSP maple syrup
1/8 tsp cayenne pepper
2 cm piece of ginger, grated
1-2 TBSP water, to thin
- preparing noodles as on packet
- Peel your Zucchini into ribbons and mushrooms . After that place olive oil in a pan and saute' your veg for three minutes .
- Drain of the off the noodles and set aside .
- place all the satay ingredients in a blow and mix till well combined
- Dish up and serve
- Enjoy .
