Ingredients
For the sauce
- Thumb size piece of fresh root ginger .
- 2 garlic Cloves
- 3 Tbsp Tomato Ketchup ( that's the twist however you can use sweet chilly sauce or fish sauce if you like . )
- 2 Tbsp Oyster Sauce
- 2 Tbsp Reduced - Salt soy sauce .
For the noodles
- 1 large red pepper
- 5 spring onions
- 1 large or 2 small chicken breast
- 3 nests medium egg noodles
- 1 Tbsp sunflower oil
Method :
- Use a Potato peeler to remove the skin from the ginger . Discard the skin , the carefully grate 1 Tbsp from the root . Then put in a bowl , crush the garlic and the Tomato Ketchup or the sauce of your choice , soy sauce and 3 Tbsp of water and begin to stir .
- After begin to chop the peppers into quarters . Remove the seeds and stalk diagonally in strips . Cut the ends from the spring onions , and cut the green and white of the onion lengthways . The after then cut the chicken into bite-size pieces .
- Boil a large pan of water on the hob . When the water is boiling , drop the noodles and leave them to cook for 4 mins . After that drain in a colander .
- Heat up the wok or deep pan of you choice . You should start to see smoke add the oil and chicken . Use a wooden spoon and stir the chicken around the pan . when it is half white / pink add the pepper and stir fry for a further 1 minute .
- Pour the in pan and stir well until bubbling .
- Add the noodles , spring onions and handful at a time , the toss into the sauce until well coated . Then serve
- Enjoy .
