Strawberry & Mango Nachos




Ingredients
  • 4 flour tortillas
  • 2 tablespoons vegan melted butter
  • ¼ cup sugar
  • 1 teaspoon cinnamon
  • 12 ripe strawberries, diced
  • 2 Mangos , squared
  • 1 tablespoon Malibu
  • 1 tablespoon brown sugar


Method
  1. Set oven to 375ºF. Brush one side of tortillas with butter, then sprinkle with cinnamon sugar. Cut into quarters and place in single layer on a baking sheet. Bake 10-12 minutes. Remove and let cool on the baking sheet. They will continue to crisp as they cool.
  2. Meanwhile, blend the cheese with ¼ cup powdered sugar until smooth. Add the zest of the orange (about 1 teaspoon).
  3. Mix the strawberries with the liqueur (if using) and brown sugar. Set aside at room temperature.
  4. In a small bowl, whisk 1 tablespoon of the orange juice with 2 tablespoons sugar and the sour cream.
  5. Top each tortilla chip with about a tablespoon of cream cheese, spoonful of strawberries and a drizzle of sour cream sauce. Serve quickly.

Vegan Apple Cinnamon Pancakes



Hello my glamorous friends , are you stuck ? Don't know what make or have for breakfast ? why not try Apple cinnamon pancakes , it an amazing twist on the traditional American pancake recipe . Also it almost has a winter feel to it because of the cinnamon added . If you don't like cinnamon why on try Vegan Chocolate pancakes or Vegan American Pancakes  .


Ingredients 
135g plain flour 
3 Tbsp caster sugar 
130ml soya milk 
1/2 tsp salt 
1 tsp baking powder
2Tbsp vegan butter 
1 apple
1/2 tsp cinnamon
2 tbsp. water  

Method 
 1. Sift the flour, baking powder, salt , milk and caster sugar into a large bowl, cut the apple in half remove the core and side one of the halved apple away . Cut the apple in to slices and place in a blender along side with the cinnamon and water . Blend until it forms  a purée . Then add the purée to the pancake batter
 
2 . With a wooden spoon or a  handheld mixer beat until you have a smooth batter. Any lumps will soon disappear with a little mixing. Let the batter stand for 5 minutes. 
 
3 . Heat a non-stick frying pan over medium heat and add a knob of butter. When it's melted, add a ladle of batter (or 1/2 cup of the batter ). It will seem very thick but this is how it should be. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown . 

Maple apple sauce

Ingredients

2 Tbsp Maple syrup
1/2 tsp cinnamon
1 halved apple

Method

  1. Cut the apple into slices and place the saucepan along with the cinnamon and maple syrup .
  2. Cook till the sauce is well heated though . ( bubbles will form )  
  3. Present on top of the pancakes .

Crispy Onion Rings Vegan

Hello my glamorous friends , now this like is a really easy recipe for summer . This would perfect for a picnic or just a cheeky snack in the day . 

Ingredients
  • ½ cup all purpose flour
  • ¼ cup corn flour
  • big pinch cayenne pepper
  • several shakes black pepper
  • 1 cup sparkling water
  • 2-3 cups bread crumbs (this is important!)
  • 2 large onions
  • 2-3 cups vegetable oil for frying
  • fine salt
Instructions
  1. Whisk together flour, corn flour , spices, sparkling water until smooth. Refrigerate 10 minutes.
  2. Meanwhile spread bread crumbs  in a shallow bowl and cut onions into thick ¾" rings.
  3. Heat oil to 350ºF
  4. Stir batter once more, thinning with additional water if necessary and use a fork to dip onion rings into batter.
  5. Let excess drip off, then coat in bread crumbs .
  6. Fry onion rings 2-3 minutes until golden.
  7. Drain on paper, sprinkle with salt, serve hot.
    Now these are super crunchy
    They go perfect with tomato ketchup

Homemade Vegan Pizza

 





Hello my glamorous friends I hope you are well and long time no talk . I don't know about you guys but I love pizza from traditional tomato base ones , to pesto base one , to avocado base ones honestly the list is endless . I think that just goes to show I love pizza . Also I would like to know what's you're favourite pizza ? and what places that do amazing vegan pizzas in London ?  .     




Pizza Sauce
  1. One can chopped Tomatoes
  2. 4 Basil leaves
  3. 1tsp vinegar
  4. 1tsp sugar
  5. pinch of salt
  6. pinch od pepper
Method :
  • Add all the ingredients  in a blender and blend till the mixture becomes smooth and well combined .
  • Place in a saucepan and mixture heat toughly though and reduce  , this should take a least 6mins .
  • After 6min you should have thickened mixture and you and feel free to add any additional condiments and spices you like .
Pizza Curst / Dough
 
Ingredients
  • 2¼ tsp active dry yeast
  • 1⅓ cups warm water
  • 3½ - 3¾ cups organic white flour*
  • 1 tbs olive oil
  • 1 tbs salt
  • 1 tsp cayenne pepper
* You could also add oregano to the mixture too *

 
Method
 
  1. Combine the yeast and the warm water in a large bowl. Let stand for 5 - 10 minutes until yeast is dissolved and begins to foam up.
  2. Mix in the rest of the ingredients. Turn the dough onto lightly floured surface and knead for 10 minutes. The dough should be smooth but not  sticky.( if does become sticky simply add 1Tbsp of flour and knead till you get a smooth dough )  Coat  a bowl with olive oil, and add the dough. Turn the dough over to coat completely with oil. Cover with a clean and  dishtowel and leave to rise in a warm place.
  3. Punch the dough down and divide it in half. and place the rest in the freezer or fridge .
  4. Roll your dough into a ball and let it rest, loosely covered, for about 10-15 minutes. Preheat the oven to 450F. Dust your baking sheet. The dough will be fairly elastic, so you’ll have to stretch it out with your rolling pin. Place the dough on your baking sheet.
  5. Now the toppings! . Add the pizza sauce you made earlier however , you could add  pesto ( which is one of my favourites ) ,avocado or just plain olive oil.  After you added you base and the rest of your toppings and why not try no cheese version or you could add Nutritional yeast flakes for cheesy flavour .
  6. When you’re ready, place your pizza in the oven. Depending on your shape and thickness  the dough will take about 20 minutes.

Vegan Chocolate pancakes

Today I waned to share with you my chocolate pancake recipe . Now these pancakes are fluffy and decadent . 

Ingredients 
135g plain flour 
cacao powder
3 Tbsp caster sugar 
130ml soya milk 
1/2 tsp salt 
1 tsp baking powder
2Tbsp vegan butter 

Method 
 1. Sift the flour, cacao powder baking powder, salt , milk and caster sugar into a large bowl.  
 
2 . With a wooden spoon or a  handheld mixer beat until you have a smooth batter. Any lumps will soon disappear with a little mixing. Let the batter stand for 5 minutes. 
 
3 . Heat a non-stick frying pan over medium heat and add a knob of butter. When it's melted, add a ladle of batter (or 1/2 cup of the batter ). It will seem very thick but this is how it should be. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown . 

4 . Repeat the process until all batter is used up .
 5 . Sreve with vegan chocolate sauce and enjoy .

Vegan chocolate granola



Hello my glamorous friends hope you are all enjoying your week so far ! Todays recipe is every chocolate lovers dream ( which is me ) this granola chocolatey , crunchy and healthy too . If you love chocolate then this granola recipe is for you . If you don't like the ingredients or your have an allergy to any of the ingredients listed you can change them for something else such as dried fruit .

Ingredients
300g oats
120g liquid sweetener
60g coconut oil
30g shredded coconut
30g cacao powder
80g any nuts you like
100g Sultana and Raisin mix
1 tsp vanilla extract
a hint of salt
2 Tbsp golden syrup

Method :
1. Place all the ingredients together mix till well combine .
2. bake at 350F/180C for 30 minutes.
3. while still warm add golden syrup mix till it well incorporated
4 leave to cool for 10min
5 serve .

The Best Vegan Pancakes ever !

Hello my glamorous friends I hope you all had lovely weekend . As you all know Monday is considered to be gloomy and missable day . As it consist of everyone going back to school and work , so I thought I could make you Monday happier by sharing this vegan pancake recipe . 

They are light , fluffy and creamy some how ( I think it is the soya milk which adds the creamy taste and texture  , I have also tried this recipe with almond milk and it adds the same creamy taste and texture .  

Ingredients
